Colorful Coleslaw–Use the veggies in the recipe, OR whatever you have in your fridge! This salad cuts the calories from those in regular slaws by making the dressing with a combination of yogurt and light mayonnaise. I’ve tested it on my family, friends, clients and a weight management class–all gave it a thumbs up!
Makes approximately 12 cups, serving size, 1 cup
Ingredients:
- 1 large carrot, grated
- ¼ small head cabbage, finely chopped
- 1 rib celery, finely chopped
- ½ medium red bell pepper, finely chopped
- 2 tablespoons finely minced red onion
- ½ stalk broccoli, finely chopped
- 1/8 small head cauliflower, finely chopped
- 1 large navel orange (10-11 oz before peeling), peeled and chopped
- 1 large apple (8-9 oz before coring), cored and chopped
- Dressing:
- ¼ cup light mayonnaise (35 calories/tbsp)
- ¼ cup non-fat, plain Greek Yogurt
- 3 Tbsp Apple Cider Vinegar
- 1/8 tsp Kosher salt (or 1/16 tsp regular salt)
- Pinch nutmeg
- Pinch cinnamon
Directions: Mix vegetables and fruit together in large mixing bowl. Mix dressing ingredients until smooth, and pour over vegetables/fruit mixture. Serve immediately or store in refrigerator for up to 4 days.
