Colorful Coleslaw–Use the veggies in the recipe, OR whatever you have in your fridge! This salad cuts the calories from those in regular slaws by making the dressing with a combination of yogurt and light mayonnaise. I’ve tested it on  my family, friends, clients and a weight management class–all gave it a thumbs up!

Makes approximately 12 cups, serving size, 1 cup

Ingredients:

  • 1 large carrot, grated
  • ¼ small head cabbage, finely chopped
  • 1 rib celery, finely chopped
  • ½ medium red bell pepper, finely chopped
  • 2 tablespoons finely minced red onion
  • ½ stalk broccoli, finely chopped
  • 1/8 small head cauliflower, finely chopped
  • 1 large navel orange (10-11 oz before peeling), peeled and chopped
  • 1 large apple (8-9 oz before coring), cored and chopped
  • Dressing:
  • ¼ cup light mayonnaise (35 calories/tbsp)
  • ¼ cup non-fat, plain Greek Yogurt
  • 3 Tbsp Apple Cider Vinegar
  • 1/8 tsp Kosher salt (or 1/16 tsp regular salt)
  • Pinch nutmeg
  • Pinch cinnamon

Directions:  Mix vegetables and fruit together in large mixing bowl. Mix dressing ingredients until smooth, and pour over vegetables/fruit mixture. Serve immediately or store in refrigerator for up to 4 days.
